3 Easy California Recipes to Cook in Your Santa Barbara Vacation Rental

Simple Baked Chicken

Prep time: 10 minutes

Cook time: 1 hour

Ingredients:

• 10 chicken thighs
• 4 tbsp olive oil
• 2 tsp garlic powder
• 2 tsp chili powder
• 2 tsp dried basil
• 2 tsp ground black pepper
• 1 tsp salt

Steps to Prepare:

1. Preheat oven to 400°F.

2. Toss chicken together in a bowl with the olive oil, garlic powder, chili powder, dried basil, ground black pepper, and salt.

3. Spread the chicken out in a baking dish and bake in the oven for 50-60 minutes, or until the chicken reaches a minimum internal temperature of 165°F. You'll know it's done when the outside begins to crisp and turn a lovely golden color.

Albacore Tuna Ceviche

Prep time: 10 minutes

Marinate time: 1-4 hours

Ingredients:

• ½ cup red onion (diced)
• 1 tsp salt
• ¾ lb. sushi-grade albacore tuna (diced)
• 2 jalapenos (de-ribbed and diced)
• 2 limes (juiced)
• ½ cup cilantro (chopped)
• salt & pepper

Steps to Prepare:

1. In a mixing bowl combine the onion and salt; let this sit while you do your preparing and dicing of the albacore tuna and the jalapenos. Then add the tuna and jalapenos in, along with the lime juice. Toss the mixture to ensure that the lime juice coats everything evenly. Add more lime juice if necessary, because it's the most important ingredient.

2. Marinate the mixture in the refrigerator for up to 4 hours.

3. Add the cilantro, plus some salt and pepper (to taste) before serving.

4. Eat the ceviche with locally bought tortilla chips or spread out on tostada shells.

California Surfer Cocktail

Prep time: 5 minutes

Ingredients:

• 6 oz Jagermeister liqueur
• 6 oz coconut-flavored rum
• 2 ½ cups pineapple juice
• ice cubes

Steps to Prepare:
